These mini  egg bites are my go to high in protein breakfast that is quick and easy! This has to be one of the best egg recipes without cottage cheese out there. This sort of reminds me of the Starbucks version with the Gouda cheese and bacon!

  • A great frozen meal idea. If you don’t finish these little keto bites in one sitting. Place them in the freezer for a later  date. 
  • These scrambled eggs in the oven takes all of 15 minutes. I mean let’s be honest here. Who wouldn’t love these little veggies and eggs muffin cups. 
  • Homemade egg bites are an easy make ahead breakfast.

Honestly, you may have all the ingredients for these high protein egg bites in your pantry. 

  • Fresh Eggs- I used large eggs for this recipe. You can also use egg whites in the box. That works just fine.
  • Mix Vegetables–  a mixture of red, yellow, and green bell peppers to give things a sweet and mild flavor. 

How To Make High Protein Egg Bites? 

  • Preheat your oven to 400 degrees. 
  • Chop your veggies along with your sausages into bite sized pieces.
  • Sear sausage pieces for 4 to 5 minutes. Remove and sit to the side for later. 
  • Whisk together eggs and the remaining ingredients.
  • Add the cooking spray to your individual cupcake containers with nonstick cooking spray.
  • Add the mixture to the pan ensuring not to let things overflow.
  • Bake for 15 minutes are until the eggs become fluffy. 
  • Allow to cool for 10  minutes and remove from dish.

  • Silicone Muffin Pan or Cupcake Pan
  • Non-Stick Spray 

How To Warm Egg Bites?

You can reheat egg bites in the microwave for up to 30 seconds.

Other Ways To Create 

  • Add some spinach to add even more of a protein kick. 
  • Add shredded cheese for a more comforting taste .

Ingredients

  • 6 Large Eggs
  • 1 to 2 Sausage Links (Chopped)Your favorite sausage. I used andouille sausage.
  • 1/4 Cup Sweet Peppers Any color of your choice
  • Salt To Taste
  • Garlic Powder To Taste
  • Black pepper To Taste
  • Cooking spray or butter

Instructions

  • Preheat your oven to 400 degrees. Grease your muffin tin with spray and butter.

  • In a bowl mix together all of the ingredients.
    6 Large Eggs, 1 to 2 Sausage Links, 1/4 Cup Sweet Peppers, Salt, Garlic Powder, Black pepper
  • Pour the egg mixture to the muffin tin at about 3/4 full. Bake for 15 to 20 minutes until the top is slightly browned.
