Ingredients For High Protein Pancakes

Cottage cheese Pancakes
  • Oats-This is another great source of fiber and protein. Gives the pancakes texture.
  • Banana- They add a hint of sweetness that can be taste in every single bite. 
  • Greek Yogurt- Adds flavor and help to combine all ingredients together smoothly, plus another source of added protein.
  • Eggs- This is the power pack or protein. One large egg holds about 6 grams. 
  • Blueberries- Give these cottage cheese pancakes that extra layer of goodness.
  • Low Fat Mable Syrup or Agave- This is a no brainer when it comes down to making a delicious protein packed breakfast!

How To Make Cottage Cheese Pancakes?

1. To a mixing bowl, combine the cottage cheese, eggs, oats, baking powder, and vanilla extract. Mix until well combined.

2. Gently fold in the blueberries into the pancake batter.

3. Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.

4. Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for 1-2 minutes then flip on the opposite side and do the same.

5. Repeat until all pancakes are made. 

Substitutions/Variations  

  • If you aren’t necessarily a fan of cottage cheese. You can replace that for Greek yogurt. You still get the same amount of protein using a brand such as Okios. 
  • Leave the blueberries out of the recipe and top with other fruits such as strawberries, peaches, or even pineapples.

Ingredients

  • 1 Cup Oats
  • 1/2 Cup Cottage Cheese
  • 2 Eggs
  • 1 Teaspoon Baking powder
  • 1/2 Cup Blueberries Diced(optional)
  • 1 Teaspoon Vanilla Extract
  • 1/2 Teaspooon Cinnamon
  • Honey or maple syrup Optional for topping
  • 1/2 Cup Milk
  • Butter Cooking Spray

Instructions

  • To a blender mix all of your ingredients until smooth
    1 Cup Oats, 1/2 Cup Cottage Cheese, 2 Eggs, 1 Teaspoon Baking powder, 1 Teaspoon Vanilla Extract, 1/2 Teaspooon Cinnamon, 1/2 Cup Milk
  • Heat a non-stick pan over medium heat and lightly coat it with cooking spray or butter.
    Butter
  • Fold chopped blueberries into the pancake mixture.
    1/2 Cup Blueberries
  • Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  • Repeat with the remaining batter to make more pancakes.
  • Serve warm, topped with additional blueberries and a drizzle of honey or maple syrup.
