Items Needed
- Chicken Breast—I used about 8 ounces of chicken. You can also use chicken tenders, boneless thighs, or chicken gizzards.
- Sweet Corn- Adding these golden goodies and rice will make you jump for joy.
- Black Beans- Placing them into the mix and corn will help introduce unique flavors.
- Rice- Honestly, the rice is optional but is recommended.
Steps To Make High Protein Chicken Bowl
Clean and Cut- Thoroughly clean your chicken, chop, and add to a bowl.
Create Mixture- Add all mentioned ingredients to the chicken and mix well.
Sear chicken: Add chicken to a medium-high-heat skillet and allow it to sear for 8 to 12 minutes or until done.
Cook Vegetables- Drain and allow corn and black beans to steam in the pot separately for 5 minutes.
Plate things up– Go ahead and add your precooked rice, and serve.
Other Ways To Serve
- Remove the chicken and add fresh romaine chopped lettuce. This will cut the calories and take away starches.
- Switch up the white rice and add brown rice or parboil rice with some green onions over the top.
- For a Mediterranean bowl, you only need to add a mixture of fresh Italian parsley or grape tomatoes.
Savory Chicken Bowl with Sweet Corn
Ingredients
- 2 Chicken breasts boneless and skinless
- 1 tablespoon Olive oil
- 1 tablespoon Butter
- 1 cup White Rice Cooked
- 1 cup Black Beans drained and rinsed
- 1 cup Can of Corn drained and rinsed
- Salt and pepper To taste
- Optional toppings: avocado slices chopped cilantro, lime wedges
Instructions
- Season the chicken breasts with salt and pepper on both sides.2 Chicken breasts
- Heat olive oil and butter in a large skillet over medium-high heat.1 tablespoon Olive oil, 1 tablespoon Butter
- Add the chicken breasts to the skillet and cook for about 4-5 minutes on each side until they are browned and cooked through.2 Chicken breasts
- Remove the cooked chicken from the skillet and let it rest for a few minutes before chopping it into bite-sized pieces.
